Chickpea crepe (Besan chilla)

Chickpea crepe is a quick 5-minute breakfast dish that goes well with any sauce/ketchup or by itself as well. This is known as "Besan Chilla" in North India. Besan Chilla is a staple and healthy breakfast, filled with protein and aromatic Indian spices. Fun fact - the cook time is less than 5 mins(you can time it! ;)) and kids don't refuse to eat it(makes everyone happy! :))

Ingredients:
1 cup chickpea flour
  • 1/2 teaspoon carrom seeds
  • 1/8 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1 cup onion
  • 1/2 cup tomato
  • 1 green chili(sliced)
  • 1/2 inch ginger(grated/ sliced into small pieces)
  • 2 tablespoon chopped coriander(optional)
  • 3/4 cup water
  • salt to taste


How to Make Besan Chilla (Stepwise Instructions)

1. Add chickpea flour and all other ingredients in a mixing bowl. Mix up all the ingredients.
Tip - You can pre-soak just the chickpea flour in water for 10-20 mins to form a smooth batter. I usually put it first thing in the morning while I do other chores.

2. Slowly add the water to make a batter of thick but pouring consistency. Add more water if needed. 

If the batter is too thick it won't spread properly and won't give that crispy taste. It'll also take more time to cook.

3. Heat a non-sticky pan on a medium flame. Grease it well with 1/2 teaspoon oil of your preference. When it it hot enough, pour one ladle full of batter in the center and spread it in clockwise direction until the desired level of thickness is achieved.
The thinner, the better!

4. Once the top surface start changing color to dark yellow, drizzle few drops of oil.
You will notice the edge will start leaving the pan

5. Flip it to other side and cook it for another 2-3 minutes. 
Cook pressing down with a spatula for even cooking.

6. Remove it to a plate once you start seeing brown spots on the chillla.
